Quality, traceability & documentation

Quality documentation and traceability records are coordinated according to product, batch and shipment requirements.

Laboratory testing of olive oil samples

How traceability works

Where applicable, shipment documentation and traceability records can cover up to four layers of batch information, depending on the product, supplier documentation and shipment requirements.

  1. 01

    Origin data

Cooperative, mill and growing-region information for the batch where available.

  2. 02

    Technical data

Available laboratory and COA data, including acidity, peroxide value, UV absorption values K232, K270 and ΔK, sensory assessment where applicable, and other agreed parameters.

  3. 03

    Certification data

Applicable certifications and compliance documentation, such as organic, Kosher, IFS or other relevant standards, where held and applicable.

  4. 04

    Batch movement data

Dispatch, transport and batch references recorded where available, from origin to destination.

Where available, shipment documentation includes a batch reference that buyers can use to request supporting records.

Lab parameters by grade

The specifications below are indicative reference points for the relevant product categories. Actual results depend on the batch, supplier, storage conditions and destination requirements. The applicable specification is confirmed against the batch Certificate of Analysis before shipment.

Extra Virgin Olive Oil

Free Fatty Acids
≤ 0.8%
Peroxide Value
≤ 20
  • UV absorption: K232, K270 and ΔK assessed where applicable
  • Sensory profile: Positive fruitiness with no sensory defects
  • Polyphenol content: When requested, treated as additional product information rather than a universal legal category requirement

Virgin Olive Oil

Free Fatty Acids
≤ 2.0%
Peroxide Value
≤ 20
  • Sensory profile: Category confirmed through applicable sensory assessment

Refined Olive Oil

Free Fatty Acids
Typically ≤ 0.3%
Peroxide Value
Typically ≤ 5
  • Sensory profile: Mild or neutral characteristics typical of refined oil
  • Additional category parameters: Confirmed through the applicable batch COA

Olive-Pomace Oil

  • Product specification: Confirmed according to whether the product is crude pomace oil, refined olive-pomace oil or an olive-pomace oil blend
  • Laboratory testing: Applicable acidity, peroxide, purity and safety parameters confirmed through the batch COA
  • Format: Bulk and other formats subject to supplier capability and buyer requirements

Documentation provided

Prepared as applicable to each shipment — the exact set depends on the product, destination market, buyer requirements and agreed Incoterm. Not every document below applies to every shipment.

Commercial Invoice
For customs and payment purposes.
Packing List
Packaging, quantities, weights and batch/container references.
Certificate of Origin
Confirms the product's Spanish origin; provided when required by the destination market or buyer.
Certificate of Analysis (COA)
Laboratory results covering acidity, peroxide value, UV absorption values K232, K270 and ΔK, plus sensory profile where applicable.
Sanitary / Phytosanitary Certificate
Provided only where required by the destination market or the product's own regulations.
Transport Document
Matches the mode of shipment — CMR for road freight, Bill of Lading (B/L) for sea freight, or Air Waybill (AWB) for air freight.
Export Customs Declaration (MRN)
The formal EU export declaration and its Movement Reference Number; applies depending on the destination and how the shipment is cleared through customs.
Preferential Origin Document (EUR.1 / Origin Declaration)
A EUR.1 movement certificate or an origin declaration on the invoice, used to claim preferential tariff treatment; applies depending on the destination, the trade agreement in place and the agreed shipment terms.
